Banana loaf
This dense banana loaf is even more delicious when sliced and served with a drizzle of honey and sliced fresh bananas.

Ingredients
Banana loaf
- 3/4 cup (120g) wholemeal self-raising flour
- 1/2 cup (75g) self-raising flour
- 1 teaspoon ground cinnamon
- 20 gram butter
- 1/2 cup (110g) firmly packed brown sugar
- 1 egg
- 1/4 cup (60ml) low-fat milk
- 1/2 cup mashed banana
- 1/3 cup (115g) honey
- 2 small bananas, sliced thickly
Method

1Preheat oven to 200°C (180°C fan-forced). Grease 8cm x 26cm bar cake pan; line base with baking paper.

2Process flours, cinnamon and butter until crumbly. Add sugar, egg, milk and mashed banana; pulse until ingredients are just combined. Pour mixture into pan.

3Bake about 40 minutes. Stand loaf 5 minutes; turn, top-side up, onto wire rack to cool. Serve sliced, topped with honey and sliced banana.
Notes
Did you know? Bananas are rich in fibre, including a special type of fibre known as resistant starch that is important for bowel health. Green or firm bananas are higher in resistant starch than ripe bananas.
