Banana orange and date health loaf
Low in sugar and rich in fruit, this wholemeal loaf makes an excellent breakfast or afternoon energy booster.

Ingredients
Banana orange and date health loaf
- 90 gram butter
- 2 teaspoon grated orange rind
- 1/3 cup raw sugar
- 2 eggs
- 1 cup mashed banana (from 3 over-ripe bananas)
- 3/4 cup chopped dates
- 2 cup wholemeal self-raising flour
- 1/2 cup orange juice
Method

1Grease a 14cm x 21cm loaf pan, line base and sides of pan with paper; grease paper.

2Cream butter, rind and sugar in small bowl with electric mixer until light and fluffy, beat in eggs one at a time, add banana, beat until combined.

3Transfer mixture to large bowl, stir in dates, then half the flour and half the orange juice, then stir in remaining flour and orange juice; stir until smooth.

4Spread mixture into prepared pan. Bake in moderate oven for about 1 hour. Stand 5 minutes before turning on to wire rack to cool. Loaf will keep for 3 days.
