Low in sugar and rich in fruit, this wholemeal loaf makes an excellent breakfast or afternoon energy booster.

Ingredients

Banana orange and date health loaf
  • 90 gram butter
  • 2 teaspoon grated orange rind
  • 1/3 cup raw sugar
  • 2 eggs
  • 1 cup mashed banana (from 3 over-ripe bananas)
  • 3/4 cup chopped dates
  • 2 cup wholemeal self-raising flour
  • 1/2 cup orange juice

    Grease a 14cm x 21cm loaf pan, line base and sides of pan with paper; grease paper.

    Cream butter, rind and sugar in small bowl with electric mixer until light and fluffy, beat in eggs one at a time, add banana, beat until combined.

    Transfer mixture to large bowl, stir in dates, then half the flour and half the orange juice, then stir in remaining flour and orange juice; stir until smooth.

    Spread mixture into prepared pan. Bake in moderate oven for about 1 hour. Stand 5 minutes before turning on to wire rack to cool. Loaf will keep for 3 days.
