- 4 overripe bananas (see notes)
- 125 gram butter, softened
- 1 teaspoon vanilla essence
- 1/2 cup caster sugar
- 2 eggs
- 1 tablespoon milk
- 1 1/2 cup self-raising flour
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon ground cinnamon
- 1 1/2 cup icing sugar
- 125 gram store bought cream cheese, chopped
- 30 gram butter, softened
- 1 teaspoon lemon rind, grated
- banana slices, to serve
Cream cheese frosting
- 125 gram store bought cream cheese, chopped
- 30 gram butter, softened
- 1 teaspoon lemon rind, grated
Method

1Before you turn oven on, move a shelf to the middle of the oven.

2Preheat oven to 180°C (160°C fan-forced). Grease a deep 20cm round cake pan; line the base with baking paper and extend 5cm up long sides.

3Place bananas into large bowl of electric mixer and mash with a fork for about 30 seconds, or until almost smooth.

4Add butter, essence, sugar, eggs and milk to bowl. Sift flour and soda into bowl. Beat cake mixture on medium speed for about 4 minutes, or until pale in colour.

5Pour cake mixture into pan. Bake for about 1 hour. Stand cake in pan 5 minutes before turning, top-side up, onto wire rack to cool.

6Meanwhile, to make cream cheese frosting: Sift icing sugar into small bowl of an electric mixer. Add cheese, butter and rind. Beat mixture on medium speed for 1-2 minutes, or until frosting is smooth.

7Spread frosting over top of cake; sprinkle with cinnamon and top with slices of fresh banana, before serving.
Notes
You need overripe, almost black, bananas for this recipe because they give the best flavour. If your bananas are not ripe enough, put them in a paper bag in a cool place (not the refrigerator) for a day or two.
