Beef and bean burritos

Ingredients
Beef and bean burritos
- 1 tablespoon vegetable oil
- 300 gram rump steak, trimmed, thinly sliced
- 1 red onion, halved, sliced

- 40 gram packet burrito seasoning
- 8 burrito tortillas
- 50 gram mixed lettuce leaves
- 1/2 cup grated mozzarella
- sour cream, to serve
Guacamole
- 1 avocado, peeled, seeded
- 1 tomato, chopped
- 1 tablespoon chopped coriander
- 1 tablespoon lime juice
- 2 teaspoon chilli sauce
Method
Beef and bean burritos

1Heat oil in a large frying pan on high. Cook beef and onion, in 2 batches, 4-5 minutes each batch, until well browned.

2Return beef to pan; stir in beans, water and burrito seasoning. Bring to boil, stirring. Reduce heat to low; simmer 1-2 minutes.

3To make guacamole, mash avocado in a bowl. Add all remaining ingredients, mixing until well combined; season to taste. Set aside.

4Meanwhile, warm tortillas following packet instructions. Place a few lettuce leaves on each tortilla. Top with beef mixture and sprinkle with cheese. Roll up securely.

5Halve tortillas and serve with guacamole and sour cream.
