Ingredients

Beef and onion stronganoff
  • 300 gram fettuccine
  • 1 tablespoon olive oil
  • 700 gram beef strips
  • 2 small onions, 1 finely sliced, 1 grated
  • 200 gram button mushrooms, thickly sliced
  • 1 cup (240g) light sour cream
  • 1/2 cup (125ml) salt-reduced chicken stock
  • 1 tablespoon tomato paste
  • snipped chives, to serve

Method

    Cook fettuccine in a pan of boiling salted water according to packet instructions; drain.

    Meanwhile, heat oil in a large frying pan on high; cook beef, in batches, 2 minutes each batch, until browned. Remove from pan.

    Cook sliced onion in same pan on medium heat 5 minutes, until soft. Add mushroom; cook 2 minutes, until lightly browned.

    Stir in beef, sour cream, stock, tomato paste and grated onion. Reduce heat to medium-low; simmer 2-3 minutes, until heated through.

    Divide pasta between plates; top with beef stroganoff. Scatter over chives and serve.
