Ingredients
Beef and onion stronganoff
- 300 gram fettuccine
- 1 tablespoon olive oil
- 700 gram beef strips
- 2 small onions, 1 finely sliced, 1 grated
- 200 gram button mushrooms, thickly sliced
- 1 cup (240g) light sour cream
- 1/2 cup (125ml) salt-reduced chicken stock
- 1 tablespoon tomato paste
- snipped chives, to serve
Method
Beef and onion stronganoff

1Cook fettuccine in a pan of boiling salted water according to packet instructions; drain.

2Meanwhile, heat oil in a large frying pan on high; cook beef, in batches, 2 minutes each batch, until browned. Remove from pan.

3Cook sliced onion in same pan on medium heat 5 minutes, until soft. Add mushroom; cook 2 minutes, until lightly browned.

4Stir in beef, sour cream, stock, tomato paste and grated onion. Reduce heat to medium-low; simmer 2-3 minutes, until heated through.

5Divide pasta between plates; top with beef stroganoff. Scatter over chives and serve.
