Beef, broccolini and spinach stir-fry

In just about 20 minutes you can have this healthy beef and greens stir-fry on the table. It's hearty enough to be a meal on its own, but feel free to serve with a steaming bowl of rice or noodles for an extra carb hit.

Ingredients

Beef, broccolini and spinach stir-fry
  • 2 tablespoon peanut oil
  • 700 gram beef strips
  • 2 clove garlic, crushed
  • 250 gram broccolini, chopped coarsely
  • 300 gram enoki mushrooms
  • 250 gram baby spinach leaves
  • 1/4 cup (60ml) beef stock
  • 1/4 cup (60ml) oyster sauce

Method

    Heat half the oil in wok; stir-fry beef, in batches, until browned all over.
  • 2
    Heat remaining oil in wok; stir-fry garlic and broccolini until just tender.

    Return beef to wok with mushrooms, spinach, stock and sauce; stir-fry until spinach is just wilted.
