Beef fajitas
Delicious beef fajitas with sizzled capsicum and onions in warm soft tortillas are a quick and tasty mid-week meal. Kids may enjoy a small dollop of sour cream on their tortillas.

Beef fajitas
- 2 tablespoon tequila (optional)
- 1 lime, juiced, plus extra to sprinkle
- 2 clove garlic, crushed
- 1 tablespoon oil
- 1 cup coriander leaves, plus 1 tablespoon chopped
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- 800 gram beef rump steak
- 4 tomatoes, diced
- 1 white onion, 1/2 diced, 1/2 sliced
- 2 avocados
- 2 capsicum, cut into strips
- tortillas, to serve
Method

1In a bowl, combine tequila, lime juice, garlic, 1 teaspoon of oil, chopped coriander, oregano, cumin and pepper to taste. Add beef, toss to coat. Refrigerate for 1 hour or overnight to marinate.

2In another bowl, combine tomato and diced onion, season. Cut avocado in half, slice and sprinkle with extra lime juice.

3Heat barbecue on high. Drain beef and bring to room temperature. Toss capsicum and sliced onion in remaining oil. Cook on flat plate 4 minutes, tossing. Season beef with salt. Cook for 2-3 minutes each side for rare, 3-4 minutes for medium, brushing with marinade.

4Set aside for 2 minutes, cut into strips. Toss with capsicum and onion. Serve on tortillas with avocado, tomato mixture and remaining coriander.
