Ingredients
Beef tacos
- old el paso ™ taco kit
- 1 small onion, finely chopped
- 500 gram lean beef mince
- 1 medium carrot, grated
- 400 gram can tomatoes
- lettuce, shredded
- 1/2 punnett cherry tomatoes
- 1 cucumber, finely chopped
- 1/2 cup chopped fresh coriander
- 1 cup grated cheddar cheese
Method

1Heat a little oil in a pan and cook onion until soft. Add mince and cook stirring with a wooden spoon to break up mince, for 5 minutes or until browned. Add Taco Seasoning, carrot and tomatoes, simmer for 2 minutes or until sauce thickens.

2Heat Taco shells according to pack directions.

3Combine cherry tomatoes, cucumber and coriander in a small bowl. Fill Taco shells with cooked mince, lettuce and cherry tomato and cucumber mixture. Drizzle with Taco sauce and top with cheese.
