Beef wellies
These mini beef wellingtons will be loved by both kids and adults. Great as a snack or with salad for a light meal.

Ingredients
Beef wellies
- 60 gram (2 ounces) baby spinach
- 3 sheets puff pastry
- 350 gram (11 ounces) piece beef eye fillet
- 1 egg
Method

1Preheat oven to 240°C/475°F.

2Cook spinach in medium saucepan until wilted.

3Cut 8 x 10cm (4-inch) rounds from pastry sheets.

4Cut beef into eight 1cm (½-inch) slices; season.

5Place small amounts of spinach on top of each piece of beef. Place pastry rounds over beef; press pastry over and around beef to enclose, leaving the base open slightly to allow juices to escape.

6Place beef parcels on oiled wire rack over baking dish; brush with egg. Bake about 15 minutes or until pastry is browned.
