Beef with oyster sauce

Ingredients

Beef with oyster sauce
  • 1/4 cup oyster sauce
  • 2 tablespoon soy sauce
  • 2 teaspoon brown sugar
  • 2 tablespoon water
  • 300 gram dried rice stick noodles
  • 2 tablespoon vegetable oil
  • 2 eggs
  • 500 gram budget beef rump steak, thinly sliced
  • 400 gram broccoli, cut into small florets
  • 150 gram snow peas, trimmed, halved lengthways
  • 1/4 cup basil leaves, torn
  • 2 green onions, thinly sliced

Method

Beef with oyster sauce

    Combine oyster sauce, soy sauce, sugar and water in a small bowl. Stir until sugar has dissolved. Set aside.

    Soak noodles in boiling water in a large heatproof bowl for 10 minutes; stir to separate strands. Drain. Rinse under cold running water; drain well.

    Heat a wok or large frying pan over high heat. Add half the oil; swirl to coat surface. Whisk eggs with 1 tablespoon water. Add egg mixture to wok. Cook for 30 seconds; turn and cook for 30 seconds more or until just set. Transfer to a chopping board; slice. Wipe wok clean.

    Add remaining oil to wok over high heat. Stir-fry beef, in batches, until seared. Transfer to a heatproof bowl. Add broccoli and snow peas to wok; stir-fry for 1 minute. Add sauce mixture and noodles; stir-fry for 2 minutes. Add beef and basil to wok. Toss until heated. Place noodles in serving bowls. Serve topped with egg and onion.

Notes

Budget beef rump is a cheap alternative to rump steak.
