Berry ice-cream sandwich
- 2 cup frozen blackberries, thawed, drained
- 500 millilitre (2 cups) softened vanilla ice-cream
- 12 butternut snap biscuits
Method
Berry ice-cream sandwich

1Fold blackberries into ice-cream.

2Working quickly, place 6 biscuits on a baking paper-lined tray; place a scoop of ice-cream on top of each biscuit, then top with another 6 biscuits.

3Press down gently. Freeze 20 minutes before serving.
