Bircher muesli

Bircher muesli is a brilliant make-ahead breakfast, and great for anyone who wishes they had more time in the morning - all the hard work can be done the night before.

Ingredients

Bircher muesli
  • 1 3/4 cup traditional rolled oats
  • 1 3/4 cup reduced-fat milk
  • 200 gram greek-style natural yoghurt
  • 1/2 cup slivered almonds, toasted
  • 1/4 cup chopped dried apricots
  • 1/4 cup sunflower seeds
  • 1/4 cup shredded coconut
  • 1 medium apple, cored, coarsely grated
  • 1/2 cup frozen (thawed) or fresh raspberries
  • 1 tablespoon honey, to serve

Method

Bircher muesli
  • 1
    Combine oats and milk in a medium bowl. Cover with plastic food wrap; chill overnight to soak.

    Stir in yoghurt, almonds, apricots sunflower seeds, coconut and apple.

    Spoon into serving bowls; sprinkle with raspberries. Serve drizzled with honey.

Notes

Serve muesli with extra yoghurt, if you like. You can use low-fat soy milk or rice milk.
