Bircher muesli

Smooth, creamy and fruity, there are few breakfasts more enjoyable than the humble bircher muesli. Full of wholegrain godness and topped with blueberries and yoghurt, this healthy breakfast is utterly delicious and will keep you fueled for the day.

Ingredients

Bircher muesli
  • 1 1/2 cup (135g) rolled oats
  • 1 cup (250ml) milk
  • 1/2 cup (125 ml) apple juice
  • 1 tablespoon honey
  • 1/3 cup (55g) sultanas
  • 25 tablespoon finely chopped dried pineapple
  • 1/2 cup (140g) natural yoghurt
  • 1/2 medium apple, peeled, grated coarsely
  • extra yoghurt, for serving
  • 1/2 cup (75g) fresh blueberries, to serve

Method

Bircher muesli
  • 1
    Combine oats, milk, juice, honey and sultanas in a large bowl. Cover, refrigerate overnight.

    Stir in pineapple, yoghurt and apple. Divide muesli among eight 1/3-cup (80 ml) individual glasses. Top the muesli with extra yoghurt and blueberries.

Notes

You can use any fruit of your choice to top your bircher muesli.
