Ingredients
Blackberry cream with honey wafers
- 1 cup (250g) mascarpone
- 1/2 cup (120g) thick cream
- 2 tablespoon icing sugar, plus extra to dust
- 250 gram punnet blackberries
Honey wafers
- 50 gram unsalted butter, melted
- 1/3 cup (75g) caster sugar
- 1/4 cup (35g) plain flour
- 1 egg white
- 1 tablespoon honey
Method
Blackberry cream with honey wafers

1Preheat oven to 180°C or 160°C fan. Line three baking trays with baking paper.

2To make Honey Wafers, place all ingredients in a food processor. Pulse until smooth and well combined. Spread batter onto prepared trays to form 10cm rounds. Bake for 8-10 minutes, until golden. Cool on trays.

3Mix together mascarpone, cream and icing sugar until smooth. Stir through blackberries. Place a wafer on each serving plate and top with a spoonful of blackberry cream. Cover with another wafer, dust with icing sugar and serve.

With its feather light wafers and late-summer blackberries swaddled in thick cream, this impressive dessert tastes wonderful and is so easy to make Using a pencil, trace circles on the baking paper around a saucer or biscuit cutter to make even wafers.
