Ingredients

Blackberry cream with honey wafers
  • 1 cup (250g) mascarpone
  • 1/2 cup (120g) thick cream
  • 2 tablespoon icing sugar, plus extra to dust
  • 250 gram punnet blackberries
Honey wafers
  • 50 gram unsalted butter, melted
  • 1/3 cup (75g) caster sugar
  • 1/4 cup (35g) plain flour
  • 1 egg white
  • 1 tablespoon honey

Method

    Preheat oven to 180°C or 160°C fan. Line three baking trays with baking paper.

    To make Honey Wafers, place all ingredients in a food processor. Pulse until smooth and well combined. Spread batter onto prepared trays to form 10cm rounds. Bake for 8-10 minutes, until golden. Cool on trays.

    Mix together mascarpone, cream and icing sugar until smooth. Stir through blackberries. Place a wafer on each serving plate and top with a spoonful of blackberry cream. Cover with another wafer, dust with icing sugar and serve.
