Blackberry galette

Ingredients
- 1 1/3 cup plain flour
- 100 gram cold butter, chopped
- 1/2 cup caster sugar
- 300 gram packet frozen blackberries, thawed
- 3 teaspoon corn flour
- 1/3 cup sour cream
- 1 egg, plus 1 extra, to glaze
- 1 teaspoon vanilla essence
Method

1Process flour with butter and halt the sugar until it resembles fine crumbs. Add 1-2 tablespoons iced water; process until dough just comes together.

3Preheat oven to 200°C (180°C fan-forced). Line a baking tray with baking paper. Roll pastry on a lightly floured surface to a 30cm round.

4Toss berries in cornflour. Leaving a 5cm border, scatter berries over pastry. Gently fold pastry edge over berries

5Whisk sour cream, remaining sugar, egg and essence; pour over blackberries. Brush the edges with extra egg. Bake 25-30 minutes or until golden brown.
Notes
Budget tip: Reduce the berries to 150g and add 1 finely chopped Granny Smith apple.
