Blue cheese dressing
Lovers of blue cheese, rejoice! This creamy dressing is a natural match for pear and toasted walnut salad.

Blue cheese dressing
- 100 gram blue cheese
- 4 tablespoon (60ml) mayonnaise
- juice of 1 lemon
- 142 millilitre sour cream
- 1 teaspoon (5ml) wholegrain mustard
- salt and freshly ground black pepper
Method
Blue cheese dressing

1Crumble the blue cheese and place 75g of the cheese in a food processor. Add the mayonnaise, lemon juice, soured cream, mustard and seasoning.

2Fit the lid and then blend on speed 4 for approximately 30 seconds, scraping if necessary, until well combined. Remove the lid and blade and stir in the remaining crumbled blue cheese.

3Transfer to a jar or jug, cover and chill for up to 5 days. Shake or stir just before using.

4Serve drizzled over a tossed salad of crispy bacon, walnut, pear, avocado and salad leaves.
