Ingredients
蓝莓bread
- 2 cup (300g) plain flour
- 2 teaspoon baking powder
- 1 teaspoon bicarbonate of soda
- 1/2 teaspoon ground nutmeg
- 1 cup (220g) demerara sugar
- 1 punnet blueberries
- 1 egg, lightly beaten
- 60 gram butter, melted
- 1 cup (250ml) buttermilk
- icing sugar, to dust (optional)
Method

1Preheat oven to 180°C (160°C fan-forced). Lightly grease and line base of a 21cm x 11cm x 7cm loaf pan.

2Sift flour, baking powder, bicarbonate of soda, nutmeg and a good pinch of salt into a large bowl. Stir in demerara sugar and blueberries. Make a well in centre and fold through combined egg, butter and buttermilk. Spoon into prepared pan.

3Bake for 1 hour, until risen, golden on top, and coming away from sides of pan. Set aside to cool for 10 minutes in pan, then tum out onto a wire rack to cool completely. Dust with icing sugar, if you like, and slice to serve.
Notes
Serve this at brekkie or tea with a hot cuppa or cold milk for the kids.
