Bow tie pasta with bacon and spinach
  • 350 gram bow tie pasta
  • 1 tablespoon olive oil
  • 4 rashers rindless bacon, thickly sliced
  • 3 ripe tomatoes, coarsely chopped
  • 1 cup baby spinach leaves
  • 1 clove garlic, crushed
  • 1/4 cup crumbled feta

    Meanwhile, heat oil in a frying pan on medium. Fry bacon, turning, for 3-4 minutes until crisp.

    Add tomato, spinach and garlic. Cook, stirring, for 3-4 minutes until tomato is soft.

    Add tomato mixture to pasta and toss over low heat. Season to taste. Serve topped with feta.
