This brandy butter tastes just like the one Grandma used to make… Except better! Sweet and salty, this perfect pudding accompaniment is like liquid sunshine!

Ingredients

  • 125 gram unsalted butter
  • 1/2 vanilla bean, seeds scraped
  • 1 1/2 cup icing sugar
  • 1/4 cup brandy

Method

    Place butter and vanilla seeds into a bowl and beat with electric beaters for a few minutes until creamy.

    Gradually add icing sugar and brandy, beating well and scraping down the sides of the bowl between each addition, until smooth.

    Cover and refrigerate until required. Serve with Christmas pudding.
