Ingredients
Cabbage, ham and orange salad
- 1/2 small (about 600g) red cabbage shredded
- 3 oranges, peeled, segmented,
- 1/3 cup cup (80ml) orange juice
- 1 red capsicum, cut into long, thin strips
- 300 gram lean ham, sliced
- 2 teaspoon dijon mustard
- 1 tablespoon walnut or olive oil
- 1/4 cup (25g) chopped walnuts
Method
Cabbage, ham and orange salad

1In a medium-size bowl, combine cabbage, orange segments, capsicum and ham.

2In a small jug, combine orange juice and mustard. Whisk in oil and season to taste.

3Pour dressing over salad, add walnuts and toss to coat. Serve.
Notes
To remove segments from the peeled oranges, cut between the membranes over a bowl to catch some of the juice. when you've finished, squeeze juice from the remaining orange flesh and you should have enough for the dressing.
