Caesar and fig lettuce bites

Ingredients

Dressing
  • 1/4 cup whole egg mayonnaise
  • 1 tablespoon lemon juice
  • 1 tablespoon light sour cream
  • 2 teaspoon chopped capers
  • 1 anchovy, chopped
  • 1 garlic clove, crushed
  • drop of tabasco sauce
Caesar and fig lettuce bites
  • 8 thin slices sourdough bread
  • 1/4 cup freshly grated parmesan cheese, plus extra, to serve
  • 2 baby cos lettuces, leaves separated, washed
  • 12 thin slices smoked chicken, chopped
  • 6 figs, quartered

Method

Caesar and fig lettuce bites

    Preheat oven to 180°C (160°C fan-forced). Line an oven tray with foil.

    Arrange bread on tray and sprinkle with parmesan. Bake for 4-5 minutes or until golden. Remove from oven; cool. Break sourdough crisps into bite-size pieces.

    DRESSING: Combine all ingredients in a small bowl. Season to taste.

    Finely shred 4 large outer lettuce leaves. Combine shredded lettuce with chicken, figs, dressing and sourdough crisps in a bowl. Arrange on baby cos lettuce leaves, and top with extra cheese, to serve.

Notes

You can add a finely chopped hard boiled egg, if you like.
