Caesar and fig lettuce bites

Ingredients
Dressing
- 1/4 cup whole egg mayonnaise
- 1 tablespoon lemon juice
- 1 tablespoon light sour cream
- 2 teaspoon chopped capers
- 1 anchovy, chopped
- 1 garlic clove, crushed
- drop of tabasco sauce
Caesar and fig lettuce bites
- 8 thin slices sourdough bread
- 1/4 cup freshly grated parmesan cheese, plus extra, to serve
- 2 baby cos lettuces, leaves separated, washed
- 12 thin slices smoked chicken, chopped
- 6 figs, quartered
Method
Caesar and fig lettuce bites

1Preheat oven to 180°C (160°C fan-forced). Line an oven tray with foil.

2Arrange bread on tray and sprinkle with parmesan. Bake for 4-5 minutes or until golden. Remove from oven; cool. Break sourdough crisps into bite-size pieces.

3DRESSING: Combine all ingredients in a small bowl. Season to taste.

4Finely shred 4 large outer lettuce leaves. Combine shredded lettuce with chicken, figs, dressing and sourdough crisps in a bowl. Arrange on baby cos lettuce leaves, and top with extra cheese, to serve.
Notes
You can add a finely chopped hard boiled egg, if you like.
