Calzone
- 100 gram bocconcini, finely chopped
- 1/2 cup (60g) grated cheese
- 1 tomato, finely chopped
- 50 gram mild salami, finely chopped
- 1/4 cup shredded basil
- 3 sheets shortcrust pastry
- 1 egg, lightly beaten
Method

1Preheat oven to 200°C. In a bowl, combine cheeses, tomato, salami and basil.

2Cut 4 x 11cm circles from each pastry sheet. Spoon tablespoons of filling onto each round. Brush edge with egg. Fold over and seal. Place on 2 paper-lined baking trays and brush with egg.

3Bake for 10-15 minutes, until golden. Serve.
Notes
Try filling these pastries with leftover cooked mince combined with peas. Makes 12
