Caramelised onion and polenta cake

Caramelised onion and polenta cake
- 2 tablespoon olive oil, plus extra to grease
- 4 large onions, thinly sliced
- 2 tablespoon brown sugar
- 2 tablespoon balsamic vinegar
- 3/4 cup (90g) grated mozzarella or cheddar
- 3/4 cup (90g) grated fontina or swiss cheese
- 2 cup (340g) instant polenta
- 30 gram butter
- 1 1/2 cup (120g) grated parmesan
- mixed salad greens, to serve
Method
Caramelised onion and polenta cake

1Grease a 23cm square baking dish with oil.

2Heat oil in a frying pan on low. Cook onion for 15 mins, until soft. Add sugar and vinegar. Cook, stirring, for 5 mins, until caramelised. Remove from heat and stir through cheese.

3Bring 6 cups salted water to boil on high. Reduce heat to medium. Gradually add polenta in a thin, steady stream, whisking constantly, until smooth. Reduce heat to low. Cook, stirring, for 5-10 mins, until polenta comes away cleanly from side of pan. Stir in half of butter and half of parmesan.

4Preheat grill on high. Pour half of polenta into prepared dish. Cover with onion mix and spread over remaining polenta. Sprinkle with remaining parmesan and dot with remaining butter. Place under grill for 5 mins, until golden. Cut into squares Serve with salad.
