Caramelised onion bangers and mustard mash

Caramelised onion bangers and mustard mash
- 1 kilogram potatoes, peeled, chopped
- 8 pork sausages
- 1 cup caramelised onion relish
- 1/3 cup milk
- 2 tablespoon seeded mustard
- 30 gram butter
- cherry truss tomatoes
Method
Caramelised onion bangers and mustard mash

1Place potatoes in a saucepan and cover with cold water. Bring to the boil on high. Cook for 15-20 minutes, until tender.

2Place 375g cherry truss tomatoes on an oven tray, drizzle with olive oil and season. Bake in a moderate oven, 180°C, for 15-20 minutes, until slightly collapsed.

3Meanwhile, heat a large frying pan on medium. Cook sausages for 8-12 minutes, turning on all sides, until cooked through. Add caramelised onion to pan, stirring to heat through.

4Drain potatoes and return to saucepan. Mash well. Stir in milk, mustard and butter. Season to taste.

5Serve sausages and onions on a bed of mash. Accompany with roasted cherry truss tomatoes.
Notes
For a variation, serve sausages and onions in warm rolls with Dijon mustard and rocket.
