Ingredients

Caramelised onion bangers and mustard mash
  • 1 kilogram potatoes, peeled, chopped
  • 8 pork sausages
  • 1 cup caramelised onion relish
  • 1/3 cup milk
  • 2 tablespoon seeded mustard
  • 30 gram butter
  • cherry truss tomatoes

Method

Caramelised onion bangers and mustard mash
  • 1
Place potatoes in a saucepan and cover with cold water. Bring to the boil on high. Cook for 15-20 minutes, until tender.
  • 2
Place 375g cherry truss tomatoes on an oven tray, drizzle with olive oil and season. Bake in a moderate oven, 180°C, for 15-20 minutes, until slightly collapsed.
  • 3
Meanwhile, heat a large frying pan on medium. Cook sausages for 8-12 minutes, turning on all sides, until cooked through. Add caramelised onion to pan, stirring to heat through.
  • 4
Drain potatoes and return to saucepan. Mash well. Stir in milk, mustard and butter. Season to taste.
  • 5
Serve sausages and onions on a bed of mash. Accompany with roasted cherry truss tomatoes.

Notes

For a variation, serve sausages and onions in warm rolls with Dijon mustard and rocket.
