Ingredients

Carrot, orange and ginger soup
  • 1 tablespoon olive oil
  • 700 gram carrots, peeled, chopped
  • 1 large onion, chopped
  • 1 tablespoon finely grated ginger
  • 1/2 chicken stock
  • 2 strips of peel and juice 1 orange
  • zest 1 orange and coriander sprigs, to garnish

    In a large saucepan, heat oil on medium. Add carrot, onion and ginger. Cover and cook 10 minutes, stirring occasionally, until onion is tender.

    Add stock, peel and orange juice, then bring to the boil. Reduce heat to low and simmer gently 20-25 minutes. Remove the orange peel.

    Using a hand blender, puree mixture until smooth. Season to taste. Top with orange zest and coriander sprigs to serve.
