Ingredients
Carrot sambal
- 1 medium (170g) red onion, sliced thinly
- 1 (130g) lebanese cucumber, seeded, grated coarsely
- 1 large (180g) carrot, grated coarsely
- 1 long green chilli, sliced thinly
- 2 teaspoon finely grated fresh ginger
- 1/4 cup (35g) crushed roasted peanuts
- 1 tablespoon lemon juice
Method
Carrot sambal

1Combine onion, cucumber, carrot, chilli, ginger and nuts in a small bowl.

2Just before serving, stir in juice and season with salt.
