Celebration ice-cream and cake terrine

For an elegant Christmas dessert, try this cheat's ice-cream terrine served with fresh berries. For a more layered look, you could use two different flavours of ice-cream.

Ingredients

Celebration ice-cream and cake terrine
  • 450 gram (14½ ounces) store-bought fruit cake, cut into 1.5cm (¾-inch) slices
  • 2 tablespoon orange-flavoured liqueur
  • 2 litre (8 cups) vanilla ice-cream, softened
  • 1 tablespoon finely grated orange rind
  • fresh mixed berries, to serve

    Line 14cm x 21cm (5½-inch x 8½-inch) loaf pan with plastic wrap.

    Brush cake slices with liqueur.

    Place ice-cream in large bowl; stir in rind.
  • 4
    Spread half the ice-cream mixture into pan; top with cake slices then remaining ice-cream. Cover with plastic wrap; freeze until firm. Using hot knife, cut terrine into six slices. Serve with fresh mixed berries.
