Celebration ice-cream and cake terrine
For an elegant Christmas dessert, try this cheat's ice-cream terrine served with fresh berries. For a more layered look, you could use two different flavours of ice-cream.

Ingredients
Celebration ice-cream and cake terrine
- 450 gram (14½ ounces) store-bought fruit cake, cut into 1.5cm (¾-inch) slices
- 2 tablespoon orange-flavoured liqueur
- 2 litre (8 cups) vanilla ice-cream, softened
- 1 tablespoon finely grated orange rind
- fresh mixed berries, to serve
Method
Celebration ice-cream and cake terrine

1Line 14cm x 21cm (5½-inch x 8½-inch) loaf pan with plastic wrap.

2Brush cake slices with liqueur.

3Place ice-cream in large bowl; stir in rind.

4Spread half the ice-cream mixture into pan; top with cake slices then remaining ice-cream. Cover with plastic wrap; freeze until firm. Using hot knife, cut terrine into six slices. Serve with fresh mixed berries.
