Char-grilled sirloin steak with garlic butter

Garlic butter
- 200 gram ballantyne avocado spreadable butter
- 4 clove garlic, finely chopped
- 2 eschalots, finely chopped
- 1 teaspoon dijon mustard
- 1 teaspoon sweet paprika
- 1 tablespoon finely chopped parsley
- 1 tablespoon chopped tarragon
- 2 teaspoon finely chopped thyme
Char-grilled sirloin steak with garlic butter
- 4 sirloin steaks (200g each), at room temperature
- vegetable oil, for brushing
- french fries and wild rocket, to serve
Method
Char-grilled sirloin steak with garlic butter

1Preheat oven to 220C.

2Make garlic butter: Melt 20g butter in a small pan over medium-high heat. Add garlic and eschalot and cook for 2-3 minutes, stirring occasionally until tender and fragrant. Remove from heat, stir in mustard and paprika. Transfer to a bowl and refrigerate to cool. Beat in remaining butter. Season with salt and pepper. Stir in herbs and set aside.

3Heat a char-grill pan over medium-high heat. Brush steaks with a little oil, season with salt and pepper. Cook on char-grill for 5-6 minutes, turning once until well-browned. Transfer to a baking tray and roast for 3-4 minutes until cooked to your liking.

4Remove from oven, cover with foil and rest for 5-10 minutes.

5Dollop with garlic butter and serve with French fries and rocket.
