Char siu pork with rice noodles

Ingredients
Char siu pork with rice noodles
- 375 gram large rice stick noodles
- 1 bunch chinese broccoli, stalks and leaves separated, cut into bite-size pieces
- 1/2 cup char siu sauce
- 1 1/2 tablespoon soy sauce
- 1 tablespoon finely grated ginger
- 3 clove garlic, minced
- 1 long red chilli, chopped
- 1/2 cup chicken stock
- 450 gram pork fillet, trimmed, sliced into half-centimetre pieces
- 1 tablespoon vegetable oil
- 4 spring onions, trimmed and sliced
- 150克bean shoots
- 1/2 bunch fresh coriander leaves
- 1/2 cup roasted peanuts, chopped
Method
Char siu pork with rice noodles

1Cover noodles and broccoli stalks generously with boiling water and stand for 6 to 8 minutes, until just tender. Drain well. Rinse under cold water.

2Stir together char siu sauce, soy sauce, ginger, garlic and chilli. Combine half the mixture with the stock, reserve. Add pork to remaining sauce and stir well to coat.

3Heat oil in wok over high heat. Add spring onion, fry 1 min. Add pork, cook 3 mins, stirring regularly until pork is golden but not quite cooked through.

4Add drained noodles, broccoli stalks, raw broccoli leaves, then pour in the stock and sauce mixture. Fry 3 mins until cooked and thoroughly coated in sauce. Remove from heat. Stir through most of the bean shoots and coriander.

5Serve topped with roasted peanuts, remaining bean shoots and coriander.
Notes
Char siu sauce is a Chinese barbecue sauce available from the supermarket.
