Cheddar and chive dampers
- 3 cup self-raising flour
- 1/2 teaspoon salt
- 1/4 cup finely chopped chives
- 50 gram chilled butter, chopped
- 1 cup grated cheddar cheese
- 1 1/2 cup beer
Method
Cheddar and chive dampers

1Preheat oven to 220°C/200°C fan forced. Grease a baking tray. Combine flour, salt and chives in a bowl. Rub in butter to make fine crumbs. Stir in cheese.

2Make a well at centre of flour mixture. Add beer; stir until mixture starts to come together. Using your hands, bring together in the bowl.

3Turn out onto a lightly floured surface. Divide into 6 even portions. Shape each portion into a ball. Place on prepared tray.

4Using a knife, score a line in top of each round of dough. Bake for 20 minutes or until bread is golden and sounds hollow when tapped on the base. Serve warm.
Notes
Use milk instead of beer. Make 1 large damper instead of 6 small ones. Bake for 30 minutes.
