Ingredients
Cheese and ham souffle
- 2 teaspoon packaged dried multigrain breadcrumbs
- 50克的屁股er

- 2/3 cup milk
- 1/2 cup grated tasty cheese
- 1 tablespoon shredded parmesan
- 50 gram double-smoked ham, chopped
- 1/2 teaspoon dijon mustard
- 2 eggs, separated
- 1 tablespoon chopped chives
- mixed green salad, to serve
Method
Cheese and ham souffle

1Preheat oven to 180°C/160°C fan forced. Grease 2 x 1 1/2-cup ovenproof dishes. Sprinkle breadcrumbs over base and sides. Tip out excess crumbs.

2Melt butter in a small saucepan over low heat. Cook, stirring onion for 1-2 minutes or until softened. Add flour; cook stirring for 1 minute. Remove from heat; gradually whisk in milk until mixture is smooth. Return to heat; cook stirring over moderate heat until mixture boils and thickens. Transfer to a large heatproof bowl. Cool slightly.

3Stir cheeses, ham, mustard. egg yolks and chives into milk mixture. Season with salt and white pepper.

4Using an electric mixer, beat egg whites to stiff peaks in a small bowl. Fold into cheese mixture in 2 batches. Spoon into prepared dishes. Place dishes on a baking tray. Run your thumb gently around inside rim of dish.

5Bake for 30-35 minutes or until well risen and golden. Serve at once with mixed green salad.
Notes
You can easily double mixture to serve 4.
