Cherry peach crumble

Ingredients
Cherry peach crumble
- 425 gram can cherries, drained well
- 425 gram can sliced peaches, drained well and halved
- 1 teaspoon finely grated orange rind
- 1/4 cup (60ml) fresh orange juice
- 1/2 teaspoon vanilla essence
- 1 teaspoon brown sugar
- low-fat vanilla yoghurt, to serve
Crumble topping
- 1 cup (90g) rolled oats
- 2 tablespoon toasted slivered almonds
- 2 tablespoon brown sugar
- 20 gram chilled butter, chopped
- 1 egg white
Method
Cherry peach crumble

1Preheat oven to 180°C.

2Place cherries and peaches in a bowl. Place rind, orange juice, vanilla and sugar in a small jug and use a fork to mix well. Pour liquid over fruit and toss gently to combine. Spoon into a square (20cm, 1.25L-capacity) ovenproof baking dish. Set aside.

3Make crumble topping by placing oats, almonds and sugar in a bowl and mixing well to combine. Use fingertips to rub butter into mixture. Place egg white in a small bowl and whisk for 20-30 seconds, until just foaming. Add egg white to oats and mix well to combine.

4Spoon crumble topping evenly over fruit in dish. Cook in oven for 25-30 minutes, until golden. Spoon into bowls and serve warm with yoghurt.
