Ingredients

Chicken, bacon and pea slice
  • 4 rashers, chopped rindless shortcut bacon
  • 1 cup cooked chicken, shredded
  • 1 cup thawed frozen peas
  • 100 gram feta
  • 1/3 cup mint, chopped
  • 4细切葱
  • 1 quantity frittata mixture
  • salad, to serve

Method

Chicken, bacon and pea slice

    Preheat oven to moderate, 180°C. Lightly grease and line a 20cm square cake pan.

    Combine all ingredients except frittata mixture in a large bowl. Arrange half combined ingredients in pan. Pour over frittata mixture. Top with remaining combined ingredients.

    Bake 35-40 minutes, until just set and lightly golden on top. Serve with salad.

Notes

If you don't have a 20cm square cake pan, a 20cm pie plate could also be used to bake the frittata.
