Ingredients

Chicken balls and couscous salad
  • 1 slice stale bread, torn into chunks
  • 250 gram chicken mince
  • 2 green onions, finely chopped
  • 1/4 cup coriander, chopped
  • 1 lightly beaten egg
  • 1 tablespoon olive oil
  • lemon wedges, to serve
Couscous salad
  • 1 cup couscous
  • 1 cup boiling water
  • 1 tablespoon olive oil
  • 250 gram cherry tomatoes, halved
  • 1 lebanese cucumber, quartered lengthways, sliced
  • 2 green onions, finely sliced
  • 2 tablespoon lemon juice
  • 1 teaspoon toasted cumin seeds

Method

    Place bread in a small bowl and cover with water. Set aside to soak 5 minutes. Drain and squeeze dry.

    Place in a large bowl with mince, green onion, half coriander and egg. Mix thoroughly and season to taste. Use damp hands to shape into about 16 equal-sized bails. Arrange on tray. Chill 15 minutes.

    Heat oil in a large frying pan on medium. Cook meatballs in batches, 5-7 minutes, tossing frequently, until browned and cooked through. Drain on paper towel.

    To make couscous salad, combine couscous, water and oil in a bowl. Set aside, covered, 5 minutes. Fluff with a fork to separate grains. Toss through remaining ingredients with remaining coriander. Season to taste.

    Served meatballs with couscous. Squeeze lemon over salad when ready to eat.
