Chicken, feta and prosciutto sausages

Ingredients

Chicken, feta and prosciutto sausages
  • 4 potatoes, peeled, cut into 1 cm slices
  • 500 gram lean chicken mince
  • 50 gram low-fat feta, crumbled
  • 3 garlic cloves, crushed
  • 1/2 cup chopped parsley
  • 1 lemon, grated rind
  • 4 thin slices prosciutto, cut in half lengthways
  • tomato chutney, to serve (optional)

    Preheat oven grill on high. Lightly spray a baking tray with cooking oil spray.

    Place potato slices in a snap-lock bag and microwave at 100% for 10 minutes. Spread potato slices over prepared tray in a single layer. Spray with cooking oil spray and grill for 5 minutes, until golden.

    Meanwhile, combine chicken mince, feta, garlic, parsley and lemon rind in a bowl. Mix well. With wet hands, divide mixture into eight and roll into sausage-shaped logs. Wrap a slice of prosciutto around each sausage.

    Spray a non-stick frying pan with cooking oil spray and heat on medium. Cook sausages for 5 minutes, turning, until golden and cooked through. Serve with potato, a grinding of pepper and tomato chutney, if you like.
