Ingredients
Chilled ginger and lime honeydew
- 1 lime rind, pith removed, cut into very thin strips
- 1/3 cup (80ml) lime juice
- 1/4 cup (55g) sugar
- 1 tablespoon grated ginger
- 1 honeydew melon, seeded, flesh scooped into balls with a melon baller
Method
Chilled ginger and lime honeydew

1In a small heavy-based saucepan, combine lime rind and juice, sugar, ginger and 1/3 cup water. Heat on low, stirring, until sugar dissolves. Bring to boil and cook for 5 minutes. Pour syrup through a fine sieve into a bowl and set aside to cool.

2Add melon balls to syrup and toss to coat. Refrigerate, covered, for 2 hours. Dip wet rims of glasses in a little sugar and fill with fruit. Serve.
