Ingredients
Chilled noodles with sesame sauce
- 375 gram wonton egg noodles
- 2 tablespoon peanut oil
- 2 lebanese cucumbers, shredded
- 1 red capsicum, finely sliced
Dressing
- 1/3 cup (50g) sesame seeds, toasted and ground, plus extra, to serve
- 2 tablespoon shredded ginger
- 2 tablespoon peanut butter
- 2 tablespoon soy sauce
- 2 tablespoon chang's sesame oil
- 2 teaspoon sugar
- 2 teaspoon malt vinegar
Method
Chilled noodles with sesame sauce

1Cook noodles in a large saucepan of boiling, salted water according to packet directions. Drain, rinse under cold water and drain again. Place in a bowl with peanut oil and three-quarters of cucumber and capsicum. Toss to combine.

2To make dressing, combine all ingredients and 1/3 cup water. Season with black pepper.

3Add dressing to noodles and toss to combine. Serve topped with remaining cucumber and capsicum, and extra sesame seeds.
Notes
For extra punch, try adding 3 sliced green onions and a dash of chilli sauce to the dressing.
