Chilli chicken and asparagus stir-fry

Packed full of flavour, this spicy chilli chicken and asparagus stir fry can be ready in no time at all. Served with steamed rice and a squeeze of fresh lemon, it makes a perfect week night dinner.

Ingredients

Chilli chicken and asparagus stir-fry
  • 1 tablespoon oil
  • 1/4 cup (75g) sambal oelek
  • 2 clove garlic, crushed
  • 500 gram chicken breast fillet, sliced
  • 1 bunch asparagus, trimmed, cut into lengths
  • 125 gram baby corn, halved lengthways
  • 1 tablespoon kecap manis
  • 1 cup basil leaves
  • steamed rice, to serve
  • lemon wedges, to serve

Method

Chilli chicken and asparagus stir-fry

    Heat oil in a wok or large frying pan on high. Add sambal oelek and garlic. Cook 1 minute, until fragrant.

    Add chicken. Stir-fry 5 minutes, until cooked through. Add asparagus, corn and kecap manis. Stir-fry 3 minutes, until vegetables are tender. Remove from heat. Toss through basil leaves. Serve with steamed rice and lemon wedge.

Notes

Green beans can be substituted for asparagus, if desired.
