Ingredients
Chilli chimichangas
- 250 gram pork mince
- 1 cup mozzarella, grated
- 1 red onion, finely chopped
- 1/2 red capsicum, seeded, finely chopped
- 1/2 cup refried beans
- 1 birdseye chilli, finely chopped
- 1/2 teaspoon dried chilli flakes
- 8 flour tortillas
- 1/2 cup vegetable oil, for shallow-frying
- sweet chilli sauce, to serve
Method
Chilli chimichangas

1In a large bowl, combine mince, cheese, onion, capsicum, beans, chilli and flakes. Season to taste.

2Spoon pork mixture evenly down the centre of each tortilla. Fold in sides, then roll up to form a parcel.

3Heat oil in a large, deep frying pan until a cube of bread sizzles straight away when added. Fry parcels 3-4 minutes each side, until lightly golden and cooked through. Drain on paper towel.

4Serve with sweet chilli sauce.
