Ingredients
Chilli marinated beef in spicy coconut sauce
- 1.5 kilogram beef chuck steak, chopped coarsely
- 40 gram ghee
- 2 medium_piece (400g) red capsicums, chopped finely
- 2 medium_piece (300g) brown onions, chopped finely
- 1/2 cup (125ml) beef stock
- 1/2 cup (125ml) coconut milk
- 1 cinnamon stick
- 5 dried curry leaves
Marinade
- 1/3 cup fresh coriander, chopped
- 1/3 cup (80ml) white vinegar
- 2 fresh small red thai chillies, sliced thinly
- 2 tablespoon tomato paste
- 2 garlic, crushed
- 3小豆蔻pods, crushed
- 2 teaspoon cumin seeds
- 1 teaspoon ground turmeric
Method
Chilli marinated beef in spicy coconut sauce

1Combine ingredients for marinade in large bowl, add beef, mix well. Cover, refrigerate 3 hours or overnight.

2Heat half of the ghee in large saucepan, cook beef mixture, in batches, stirring, until browned.

3Heat remaining ghee in same pan, cook capsicum and onion, stirring, until onion is soft.

4Return beef to pan, add stock, coconut milk, cinnamon and curry leaves. Simmer, covered, 1 hour, stirring occasionally.

5Remove cover, simmer about 30 minutes or until beef is tender. Discard cinnamon stick, stir in coriander.
