Chilli parmesan wafers
These spiced cheesy wafers are delicious to snack on with a drink, or wrap up and give to friends as homemade edible gifts. The addition of fresh parsley gives an awesome kick!

Ingredients
Chilli parmesan wafers
- 2 cup (160g) finely grated parmesan cheese
- 1/2 teaspoon dried chilli flakes
- 1/2 cup finely chopped fresh flat-leaf parsley
- 1/4 cup loosely packed fresh flat-lead parsley leaves
Method

1Preheat oven to 180°C (160°C fan-forced). Oil and line oven trays with baking paper.

2Combine cheese, chilli flakes and chopped parsley in medium bowl. Sprinkle mixture onto trays, flattening slightly with fingertips. Bake about 10 minutes or until browned lightly and crisp. Cool on trays.

3Meanwhile, reduce oven to 70°C (50°C fan-forced). Line another oven tray with baking paper. Sprinkle parsley leaves on tray; bake about 15 minutes or until dried and crisp but still green.

4Break parmesan wafers into pieces to serve. Serve sprinkled with dried parsley.
