Chilli pork ramen
Traditionally a Japanese noodle dish, the addition of fragrant spices, fresh coriander and punchy chilli puts a Thai twist on this tasty pork dish.

Ingredients
Chilli pork ramen
- 1 tablespoon peanut oil
- 350 gram pork mince
- 1 birdseye chilli, finely chopped
- 1 clove garlic
- coriander roots and leaves - see tip)
- thai flavours kit
- 4 cup water
- 1 tablespoon miso paste
- 400 gram bag fresh stir-fry vegetable mix
- 180 gram cooked, drained ramen or soba noodles
Method
Chilli pork ramen

1Heat oil in large frying pan on high. Brown pork 3-4 minutes, breaking up lumps. Stir in grated ginger, chilli, crushed garlic and coriander root. Cook 1-2 minutes, until fragrant.

2Combine water and miso in medium saucepan. Bring to boil on high, stirring to dissolve miso. Add vegetables and cook 1-2 minutes.

3Divide noodles among 4 bowls. Spoon over vegetables and soup. Top with pork and coriander.
Notes
Flavour kits are small punnets of mixed fresh herbs and aromatics designed for just one meal. They are available from most supermarkets in a variety of flavours. The Thai flavour kit used for this recipe contained a small knob of ginger.
