Ingredients
Choc-marshmallow squares
- 2 tablespoon gelatine
- 1/2 cup (125ml) water
- 2 cup (440g) caster sugar
- 1 cup (250ml) water, extra
- 1/2 teaspoon lemon essence
- 1/4茶匙黄色食用色素
- 300 gram white chocolate, grated finely
Method

1Grease 20cmx 30cm lamington pan; line base and sides with plastic wrap.

2Sprinkle gelatine over water in a small bowl.

3Combine sugar and the extra water in large saucepan. Stir over heat, without boiling, until sugar dissolves; bring to the boil. Add gelatine mixture; boil steadily, uncovered, about 10 minutes or until mixture is thick but not changed in colour.

4Pour sugar mixture into large heatproof bowl of electric mixer; add essence and colouring. Beat on high speed about 5 minutes or until mixture is very thick and holds its shape.

5Spread marshmallow mixture into pan. Stand at room temperature about 2 hours or until firm.

6Using wet knife, cut marshmallow into 2cm squares; roll squares in chocolate.
Notes
Add some extra colour to the marshmallow by tinting half of it lightly with your choice of food colouring the range is limitless and can be added to suit the colour theme of your party.
