Choc-orange ricotta dates
- 10 large fresh dates
- 1 tablespoon orange-flavoured liqueur
- 1/2 cup (120g) ricotta cheese
- 1 tablespoon icing (confectioners') sugar
- 1 teaspoon orange rind, finely grated
- 50 gram dark eating (semi-sweet) chocolate, melted
Method
Choc-orange ricotta dates

1Make a shallow cut lengthways in each date (do not cut all the way through), remove seeds. Combine dates and liqueur in medium bowl, stand 15 minutes.

2Meanwhile, combine cheese, sifted icing sugar and rind in small bowl with wooden spoon.

3Drain liqueur from dates into cream cheese mixture, stir until combined. Place dates on wire rack. Spoon cream cheese mixture into piping bag, pipe mixture into dates.

4Drizzle dates with melted chocolate set at room temperature.
