Chocolate brownies
- 2 eggs
- 1/3 cup (75g) firmly packed brown sugar
- 2 teaspoon instant coffee granules
- 2 tablespoon cocoa powder
- 1 tablespoon boiling water
- 1 tablespoon olive oil
- 40 gram reduced-fat dairy-free spread, melted
- 1/4 cup (40g) wholemeal self-raising flour
- 1/4 cup (45g) dark choc bits
- 1 teaspoon cocoa powder, extra
Method

1Preheat the oven to moderate (180°C/160°C fan-forced). Line the base and sides of a deep 19cm square pan with baking paper.

2Using an electric mixer, beat eggs and sugar in a small bowl until thick and creamy. Transfer to a medium bowl.

3Blend the coffee and cocoa with the water and oil in a small bowl until smooth. Stir in the spread. Fold the cocoa mixture into the egg mixture. Fold in the flour and Choc Bits; pour the mixture into prepared pan.

4Bake, uncovered, for about 20 minutes or until firm to the touch. Stand for 30 minutes; turn onto a wire rack. Cut into squares and serve with sifted extra cocoa.
