Chocolate, cherry and chilli slice

Ingredients
Chocolate, cherry and chilli slice
- 200 gram dark chocolate, chopped
- 125 gram butter, chopped
- 1/2 cup caster sugar
- 1 long red chilli, seeded, finely chopped
- 1 1/2 cup frozen cherries, chopped
- 1 cup plain flour, sifted
- 1/2 cup almond meal

- cocoa powder, for dusting

1Preheat oven to 150°C (130°C fan-forced). Lightly grease an 18 x 28cm slice pan. Line base and sides with baking paper, extending paper 2cm above pan edge.

2In a small saucepan, combine chocolate, butter, sugar and chilli. Stir over low heat, until smooth. Transfer to a large bowl. Cool 10 minutes.

3Lightly blend in cherries, flour, almond meal and eggs until well combined. Pour mixture into prepared pan, smoothing top.

4Bake 35-40 minutes, until cooked when tested with a skewer. Cool in pan. Serve slice in squares, dusted with cocoa powder.
Notes
Remember to use good quality eating chocolate for this recipe. Chillies can be omitted if preferred - the slice is still delicious without them.
