Chocolate coconut slice
Classic chocolate coconut slice with a soft chewy base topped with chocolate icing and sprinkled with toasted coconut is always a family favourite. Perfect with a cup of tea or coffee.

Ingredients
Chocolate coconut slice
- 125 gram butter, melted
- 3/4 cup brown sugar
- 1 egg, lightly beaten
- 1/2 cup plain flour
- 1/4 cup self-raising flour
- 2 tablespoon cocoa powder
- 1 cup desiccated coconut
- 2 tablespoon toasted desiccated coconut, to serve
Icing
- icing sugar
- butter
- cocoa
Method
Chocolate coconut slice

1Preheat oven to moderate, 180°. Lightly grease an 18 x 28 cm slim pan. Line base and sides with baking paper, extending paper 2 cm above edge of pan.

2In a large bowl, combine butter, sugar and egg. Sift flours and cocoa together into the bowl, and mix lightly until combined. Fold coconut through. Spread mixture into prepared pan, smoothing top.

3Bake 20-25 minutes, until firm. Let cool completely in pan.

4To make icing: in a medium bowl, combine icing sugar, cocoa and butter. Stir in enough hot water so the icing is spreadable. Spread icing over the cooled slice. Sprinkle with toasted coconut. Serve slice cut into squares.
