Ingredients
Chocolate fudge cake
- 200 gram dark chocolate, chopped
- 200 gram softened butter
- 1 cup brown sugar
- 3 eggs, room temperature
- 1 1/2 cup plain flour
- 1/4 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon bicarbonate of soda
- 1/2 cup buttermilk
- whipped cream, strawberries, to serve
Icing
- 2 cup icing sugar
- 1/3 cup cocoa
- 20 gram melted butter
- 1/4 cup milk
Method

1Preheat oven to moderate, 180°C. Lightly grease and line a 20cm round cake pan with baking paper.

2Place chocolate in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon 4-5 minutes until melted and smooth. Cool 5 minutes.

3In a large bowl, using an electric mixer, beat butter and sugar together until pale and creamy. Add eggs, one at a time, beating well after each addition. Add chocolate and beat well.

4Fold sifted combined flour, cocoa powder, baking powder and soda into mixture alternately with buttermilk, until just combined. Spoon into pan and smooth surface.

5Bake 40-45 minutes until cooked when tested with a skewer. Cool in pan 5 minutes before turning out onto a wire rack to cool completely.

6To make icing, sift combined icing sugar and cocoa together into a large bowl. Stir in butter and enough milk to make a smooth, spreadable consistency. Spread over the top and sides of cooled cake. Serve with whipped cream and strawberries.
