Chocolate mallow slice
You can flavour and colour your marshmallow, or ice with chocolate icing.

Ingredients
Chocolate mallow slice
- 175 gram butter
- 1 teaspoon vanilla essence
- 4 weet-bix, crushed
- 1 cup flour
- 1 teaspoon baking powder
- 3/4 cup sugar
- 2 tablespoon cocoa
- 1 cup cold water
- 1 tablespoon powdered gelatine
- 1 cup sugar
- 1 egg white
- 1 cup icing sugar
Method

1Preheat oven to 180°C. Melt butter and mix in vanilla. Combine dry ingredients in a bowl, pour in the butter and mix well.

2Press into a 20 x 28cm slice pan and bake for 15 to 20 minutes until just firm. Don't overcook the base as it will be too brittle to slice.

3Place 1 cup of cold water in a saucepan, sprinkle over the gelatine and stir in the sugar. Gently heat, stirring to dissolve the sugar. Bring to the boil and allow to gently bubble for 8 minutes. Remove from the heat and allow to cool.

4Beat egg white with an electric beater until stiff peaks. Gently fold in icing sugar and then, with beater running, slowly pour in cooled gelatine mixture and beat until marshmallow is stiff and thick. Spread marshmallow over cooled base and allow to set before cutting into bars.
