Chocolate peppermint ‘cookies in a jar’
Producing 'cookies in a jar' gifts that taste as good as they look is a bit of an art. Thankfully this recipe fits the bill on both fronts.

Ingredients
- 2 cup plain flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 cup brown sugar
- 1/2 cup cocoa
- 1/2 cup white sugar
- 55 gram (about 5) small crushed candy canes
- 1/2 cup chocolate drops
Method

1Sift together the flour, baking powder, baking soda and a pinch of salt.

2Fold a sheet of plain A4 paper to form a cone. Use this to funnel the flour mixture into a sterilised 3½-cup mason jar (with a lid). Ensure you keep the sides of the jar clean – you can use a dry artist’s brush to dust the inside of the jar if necessary.

3Place a folded tea towel on the bench to form a pad and tap the base of the jar on the pad repeatedly to compact the flour and level it.

4Dust the inside of the jar with the brush if necessary. Use the funnel to add the brown sugar. Tap it to level it out, then press sugar firmly with the back of a spoon to form a cap that will stop the flour ‘travelling’.

5Funnel the cocoa in and tap very gently as it is inclined to float.

6Carefully funnel in the white sugar, then add the crushed candy canes and top with the chocolate drops.
Notes
Write these instructions on the label: 1 Preheat the oven to 180°C. 2 Beat 175g butter until light. 3 Add 1 egg, 1 egg yolk, contents of the jar and 2 Tbsp hot water. 4 Mix with a spoon, then your hands, to form a pliable dough. 5 Roll into 2cm balls and place on a greased tray, allowing room for spreading. 6 Bake for 12–14 minutes then cool on the tray. The cookies will firm as they cool. Label your gifts clearly: ‘Contains nuts’, ‘Made with love and clean hands by Rosie and Luke’. If you like, include small, apt accessories with your gifts. For example, a linen tea towel, wooden spoon or pack of coffee with the ‘cookies in a jar’.
